Layou residents exhibit their creative skills at ‘Coconut Festival’


The Layou Miracle Church for the third consecutive year hosted an annual ‘Coconut Festival’.{{more}} This festival was designed to bring the residents of the community of Layou together to celebrate the nation’s independence and to display their creative skills, using the coconut to make items of craft and food.

The Ambassador of the Republic of Cuba His Excellency Pablo Rodriguez and his wife were in attendance and enticed those present with their unique coconut fudge and coconut pudding.

Tokens of appreciation were distributed to persons who prepared the best two dishes. These went to Kimberly Lynch for her Coconut peanut bars and Josephine King for her Coconut sweet bread supreme. Andy Homer was recognized for his outstanding coconut craft.

There was a short cultural package presented by the members of various churches.

This year’s coconut fest was described as bigger and better than the last two years, and the organisers are anticipating that this will get bigger and better in 2012.

A heartfelt thanks to all persons, including the entire Layou community, for making the event a grand success.
