Peach Cobbler

Normally I am not a peach lover, however, I do enjoy a nice warm cobbler. It is so easy to make and very delicious. Give it a try.

You will need:

2 cans sliced peaches, drained
Reserve 1/ 4 cup syrup
3/ 4 cup sugar
1 tablespoon lemon juice
1/ 2 teaspoon vanilla essence
1/ 4 teaspoon almond essence
1/ 2 teaspoon cinnamon
1 teaspoon salt
4 tablespoons butter or margarine
1/ 2 cup all-purpose flour
2 tablespoon corn starch
1/ 2 baking powder
1/ 4 teaspoon salt
1 egg, slightly beaten

Method:

Preheat oven to 375º F. In a medium bowl, combine peaches, 1/2 cup sugar, corn starch, lemon juice, both essence, cinnamon, 1/2 teaspoon salt, and 1/4 cup water (or reserved syrup). Turn into 8 x 8 x 2” baking dish. Dot with 2 tablespoons butter. In a medium bowl, combine 1/2 cup flour, 1/4 cup sugar, baking powder, 1/4 teaspoon salt, 2 tablespoon butter and egg. Beat with wooden spoon until smooth. Drop in portions of batter over filling, spacing evenly. (Batter will spread during baking.) Bake 35 -40 minutes, or until the crust is golden. Serve warm with whipped cream of ice-cream.

Tips: I normally double the batter for the crust because I like it thick.
