Cassava Pone

Growing up, I remember my grandmother used to put a bunch of the grandchildren to sit in the verandah and we all had our part to play grating numerous things. When the pone was baking you could smell it from many houses away. I absolutely loved those days.

You will need:

4 oz Margarine
1 1/ 2 cups Brown Sugar
3/ 4 tsp Black Pepper (optional)
1/ 2 tsp Cinnamon
1/ 2 tsp Nutmeg
1 tsp Mixed Essence
1/ 2 cup Pumpkin (Finely Grated)
1/ 2 cup Sweet Potato (Finely Grated)
1/ 2 cup Coconut (Finely Grated)
2 cups Cassava (Finely Grated)

Method:

Preheat oven to 350°. Melt the Blue Band margarine. Add the melted margarine to brown sugar and whisk until sugar is dissolved. (5-10 minutes) Once dissolved, whisk in black pepper, cinnamon, and mixed essence. Whisk in pumpkin, sweet potato, coconut and cassava one at a time until fully incorporated. Pour into a greased baking dish and bake for 45 minutes to 1 hour.
