Strawberry Jell-O Cheesecake

My Christmas recipe this year is an absolute delight. I will be honest. I came about this recipe when I mixed up an ingredient, and I did not regret it at all.

The textures, flavours and appearance make it my favourite cheesecake so far.

Enjoy it this Christmas.

You will need:

2 (8 oz) packages of cream cheese, softened

1/2 cup sugar

1/2 tsp vanilla essence

2 eggs

1 Graham Cracker Pie Crust (preferably a 9-inch)

Strawberry Topping:

1 cup strawberries cut into small bite-size pieces

3/4 cup water

1/4 cup sugar

1 tbsp cornstarch

1/2 packet strawberry Jell-O

Method:

Mix cream cheese, sugar and vanilla at medium speed with electric mixer until well blended. Add eggs; mix until blended. Pour into crust. Bake at 350 for 40 minutes or until centre is almost set. Let cool. For topping, whisk together water, sugar and cornstarch in a small pot and bring to boil over medium-high heat. Add strawberries, stir and reduce heat to low. Let simmer for 5-6 minutes. Remove from heat and stir in Jell-O powder. Let cool before placing on top of cheesecake. You can eat it at room temperature or you can refrigerate and enjoy topped with whipped cream.

Tip: I normally use frozen strawberries, so let them thaw before you add to the pot. Depending on the size of the strawberries, only cut them into halves or not at all.
