Fritters For Everyone

Pumpkin Fritters

You will need:

 
1 lb pumpkin grated to a pulp

2 eggs (optional)

1 tsp cinnamon/spice

Sugar to taste

1/ 2 tsp baking powder

(only if you want them soft)

Salt

1 tbsp vanilla essence

Flour

Oil for frying

Method

Mix sugar, beaten eggs, salt, cinnamon and baking powder. Beat well and fold in enough flour (1 cup at a time) to make a batter with consistency for frying (should be able to spoon without being runny). Drop spoonfuls of batter in a little hot oil and fry until golden brown. Drain on absorbent paper and enjoy warm.

Spinach Fritters

You will need:

 
1 lb spinach

1 egg

1/4 oz butter

1/ 2 sweet pepper

A little thyme

2 tbsp minced onions

Black pepper and salt

1 tbsp minced chive

Breadcrumbs or flour to hold

Oil for frying

Method

Put spinach in pan with butter and seasonings to taste. Cook gently in its own moisture until tender. Drain off excess liquid and chop spinach finely, then add slightly beaten egg. Stir in enough bread crumbs/flour to make a consistency for frying (should be able to spoon without being runny). Fry in hot oil until brown. Enjoy warm.
