Peach Cobbler

This is an absolutely delicious recipe that I like to make and enjoy on a Sunday afternoon for dessert.

You will need:

2 cans sliced peaches (reserve 1/4 cup of syrup)

1 cup sugar

1 tbsp lemon juice

1/2 tsp vanilla extract

1/4 tsp almond extract

1/2 tsp cinnamon{{more}}

1 1/4 tsp salt

4 tbsp butter

1/2 cup, plus 2 tbsp flour

1/2 tsp baking powder

1/4 tsp salt

1 egg, slightly beaten

Method

Preheat oven to 375°. In a medium bowl, combine peaches, 1/2 cup sugar, 2 tbsp flour, lemon juice, vanilla and almond extracts, cinnamon, 1/2 tsp salt, and 1/4 cup of syrup. Turn into 8x8x2” baking dish. Dot with 2 tbsp butter. In a medium bowl, combine 1/2 cup flour, 1/2 cup sugar, 1/2 tsp baking powder, 1/4 tsp salt, 2 tbsp butter, egg. Beat with a wooden spoon until smooth. Drop in portions of batter over filling, space evenly. (Batter will spread during baking.) Bake 35 – 40 minutes, or until crust is golden brown. Serve warm with whipped cream or ice cream.

Tip – Feel free to use other berries/fruits whether fresh or canned. If you want a thicker crust, simply double the crust ingredients.
