Breakfast made easy

It’s the most important meal of the day and you want to start it right. So, try these quick and easy meal ideas to make sure you smile all day.

Easy Breakfast Casserole Muffins

You will need:

3-4 pieces bread, torn into small pieces (enough to fill muffin tins almost to top)

3-4 slices deli ham

1 cup shredded cheddar cheese{{more}}

8 eggs

1 cup milk

2 tsp mustard

1 tsp ground pepper (or more or less to taste)

Dried parsley

Method

Preheat oven to 400°. Grease muffins tins well. Drop bread pieces evenly in muffin tins until they come about 2/3 of the way up the tin. Sprinkle ham pieces and cheese evenly in each tin. Whisk together eggs, milk, mustard and pepper. Pour egg mixture evenly in each muffin tin. Sprinkle a little dried parsley on the top of each one. Bake for 15-18 minutes or until golden brown on top and cooked through the middle.

Easy Cinnamon French Toast Sticks

You will need:

8 slices bread

4 large eggs

1 cup heavy cream or regular milk

2 1/2 tsp cinnamon

1 tbsp sugar

1 tbsp vanilla extract

Unsalted butter, for cooking

Maple syrup, for serving

Method

Cut each slice of bread into four sticks. Set aside. In a large bowl, whisk together the eggs, heavy cream, cinnamon, sugar and vanilla. Dip each piece of bread in the egg mixture, turning to coat it on all sides so that it’s well-saturated. Shake off any excess and place the coated bread on a large plate or baking dish. Repeat the dipping process with the remaining pieces of bread. Heat a large frying pan over medium heat and add 2 to 3 tablespoons of butter. Once the butter has melted, place several of the coated sticks in a single layer in the pan. (Do not overcrowd the pan.) Cook until golden brown on one side then flip and continue cooking until the sticks are golden brown and slightly crisped on all edges. Serve immediately with maple syrup for dipping or drizzled on top.
