Easy Lemon 7-Up Cake

You will need:

5 eggs

3 cups flour

3/4 lb butter (or 3 sticks){{more}}

3 cups sugar

2 tbsp fresh lemon juice

3/4 cup carbonated lemon-lime beverage, any brand
 

Lemon Glaze

1/2 cup powdered sugar

2 tbsp lemon juice

1 tsp milk

Method.

Mix butter and sugar together for about 10 minutes. Add in your eggs, one at a time, beating after each is added. Add in flour and lemon juice. Fold in your lemon-lime soda of choice. Pour into well-greased 12–cup Bundt pan and bake at 325 for 1/1 hr and 15 minutes or until fully set. Remove from oven and transfer to wire rack to cool; then drizzle your glaze on top.

Tip – For a more lemony flavour, add more lemon juice. If you don’t want it too sweet, cut back the sugar to 1 3/4 cups sugar.
