Tuna Patties

I had the pleasure of eating these yesterday. Not one to discourage a man from the kitchen, I am placing my husband’s recipe. Enjoy!

You will need:

2 eggs

2 tsp lemon juice

1/4 cup grated cheese

3/4 cup Italian seasoned breadcrumbs{{more}}

3 (6 oz) cans tuna, drained

1/4 cup diced onion

1 pinch ground black pepper

3 tbsp oil

Chipotle Mayo Dip

1/4 cup light mayonnaise

1 tsp chili powder

1 tsp lime juice

In a small bowl, combine all ingredients and mix until smooth.

Method

Beat eggs and lemon juice in a bowl. Stir in cheese and breadcrumbs to make a paste. Fold in tuna and onions until well mixed. Season with black pepper. Shape tuna mixture into eight 1” thick patties. Heat oil in frying pan over medium heat; fry patties until golden brown, about five minutes per side.

Tip – As a substitute to the Italian seasoned breadcrumbs, you can use regular bread crumbs and season with a little all-purpose seasoning.
