Watermelon Rice Krispy Treats

If you have kids, then you know you’re always looking to keep them busy. This is a great recipe for them to help with, eat and fabulous as party favours.

You will need:

6 tbsp butter, divided in 2

6 cups mini marshmallows, divided in 2{{more}}

8 cups rice krispies, divided in 2

1/ 4 pk strawberry/cherry and lemon lime kool aid/flavour aid

Green and red food colouring

Chocolate chips or raisins for seeds

Method.

Melt 3 tbsp butter in a large saucepan over medium heat. Add 3 cups mini marshmallows and stir until melted. Remove from heat and stir in lemon lime kool aid and green food colouring until it’s the colour you want. Stir in 4 cups rice krispies until completely coated. Scoop green krispies mixture into a well-buttered 9” round cake pan. Butter your hands or a spoon lightly and press it around the outer edge of the cake pan to form a ring. Set aside. Repeat with remaining ingredients and add strawberry/cherry kool aid and red food colouring. Scoop red krispies mixture into the centre of the cake pan. Press to the level with green outer ring. After mixture completely cools place a few chocolate chips or raisins on top as seeds. Turn pan upside down to remove from pan. Slice into wedges and serve.

Tip – If you are using them as party favours, simply push straws into them and put into a plastic bag and tie.
