Bang Bang Chicken Skewers
You will need:
For Chicken Skewers:
1 1/ 2 lbs boneless, skinless chicken breast or thighs, cut into 1” cubes
2 tbsp oil
1 tbsp soy sauce
1 tbsp honey
1 tsp garlic powder
1tsp smoked paprika
1/ 2 tsp salt
1/ 2 tsp black pepper
Wooden Skewers (soaked in water for 30 minutes)
For Bang Bang sauce:
1/ 2 cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp pepper sauce (optional)
1 tbsp honey
1 tsp lime juice
Method:
In a large bowl, mix oil, soy sauce, honey, garlic powder, smoked paprika, salt and black pepper.
Add chicken pieces and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes or up to 4 hours for maximum flavour. For sauce, in a small bowl, whisk together mayonnaise, sweet chili sauce, hot sauce, honey and lime juice. Set aside. Assemble the skewers and thread the marinated chicken onto the soaked skewers. If you are grilling, preheat the grill to medium high heat. Cook skewers for about 10-12 minutes, turning occasionally, until chicken is cooked through. For the oven, preheat to 400 degrees. Place skewers on a baking sheet and bake
for 20-25 minutes, flipping halfway. It can also be done in an air fryer by setting to 375 degrees for 10-12 minutes, flipping halfway. Serve drizzled with Bang Bang sauce over the skewers or as a dipping sauce.
