Quick and Easy Garlic Flatbread
Perfect for dipping in your sauce with any meat or even a vegetarian option.
You will need:
2 cups flour, plus extra for kneading
1 teaspoon salt
1 teaspoon fast-acting instant yeast
1 tablespoon softened butter
2 tablespoons vanilla yogurt
2/3 cup cool water
2 tablespoons melted butter
2 teaspoons garlic puree
2-3 teaspoons chopped coriander

Method:
In a large bowl, combine flour, salt, and yeast. Add softened butter, yogurt, and most of the water. Adjust water as needed for a soft, slightly sticky dough. Using a wooden spoon, stir until a dough forms. Transfer to a floured surface and knead for 5-10 minutes until smooth. Lightly oil a large bowl, place the dough inside, cover, and let it rise until doubled in size (typically a couple of hours). Tip the dough onto a floured surface, fold it inwards to release air, then divide into six equal pieces. Roll each piece into a 4.5-5 inch diameter circle. Place on a lined baking tray to relax for 30-45 minutes. Mix melted butter, garlic puree, and chopped coriander in a bowl. Set aside. Heat olive oil in a pan over medium-high heat. Fry each flatbread for 3-4 minutes on each side until golden and puffed. Remove from heat and brush with the garlic and coriander butter before serving.
