Peach Pecan Bread
You will need:
1 cup pecans, coarsely chopped
2 large peaches, peeled, pitted, and cut into chunks
2/3 cup granulated sugar
1/4 cup milk
1/4 cup oil
2 large eggs
2 cups all purpose flour
1 teaspoon salt
2 teaspoons baking powder
Glaze
1/2 cup powdered sugar
2 tablespoons milk
Method:
Peel and cut up the peaches. Set aside and chop the pecans. In a large bowl stir together the sugar, milk, oil, and eggs. Now mix in the flour, salt, and baking powder. The batter will be a bit dry. Fold in the peaches and pecans until thoroughly blended. Spoon the batter into a standard 9×5 loaf pan or two smaller size half pans. Bake at 350º F for 50-60 minutes, or until knife inserted into the loaf comes out clean. Allow it to cool for 20 minutes. In a small bowl whisk together the milk and powdered sugar. Drizzle over the cooled bread just before serving.
