Banana Pancake Dippers
I have done these lots of time and they are so delicious. Sometimes I even use cubed bananas and do the pancakes. And kids absolutely love them.
You will need:
3 bananas, halved and sliced lengthwise
1 tbsp. butter
1 batch prepared pancake batter (see below)
Condiment of choice for dipping
Pancake Batter
1 1/ 2 cup all-purpose flour
1 tbsp. baking powder
2 tbsp. packed brown sugar
1 tsp. kosher salt
3/ 4 cup whole milk
1/ 2 cup sour cream or butter milk
2 large eggs
1 tsp. pure vanilla extract
Method:
In a large bowl, whisk together flour, baking powder, brown sugar, and salt. In a separate bowl, whisk together milk and sour cream, then add eggs one at a time. Stir in vanilla. Add wet ingredients to dry ingredients and stir with a wooden spoon until just combined. In a large bowl, dip bananas in pancake batter. In a large skillet over medium-low heat, melt butter. Add dipped bananas and let cook until golden, 2 minutes per side. Serve with melted chocolate, maple syrup, whipped cream or even fruit filling for dipping.
