Thai Meatballs
This is a wonderful variation on meatballs and so simple, anyone can make it. Great for any function.
You will need:
MEATBALLS
1 lb ground turkey or chicken
1 large (about 1/2 cup) shredded carrot
2 tbsp fresh parsley chopped
1 red pepper chopped
1/4 cup onion, chopped
2 tbsp fresh grated ginger
1 – 2 tbsp soy sauce{{more}}
salt to your taste
pepper to your taste
1 egg
Dash red pepper flakes â optional.
FOR THE SAUCE
1/4 cup soy sauce
1/4 cup chicken stock
2 tbsp oil
2 tsp fresh grated ginger
1 tsp chili paste
1 garlic clove crushed
Method
Preheat oven to 400°. In a bowl, combine all of your meatball ingredients. Mix well and form into balls. If the mixture is a bit wet and sticks, wet your hand with a little water and then roll the balls. Place balls on lined baking sheet and bake for 20-25 minutes. While the meatballs are baking, combine all sauce ingredients in a small pot over medium heat. Once boiling, stir, and reduce heat to a simmer. When meatballs are done pour sauce over them, or use it as a dipping sauce.
Tip – You can add a bit of sugar/honey to the sauce if you wish to add sweetness. If you want to thicken it, add 1 tbsp corn starch to 1 tbsp water, mix well, then add to the sauce while boiling and stir until combined thoroughly.
