Cool Downs

I don’t know about you, but I have been feeling the heat these days. Let’s get the cool down going with these day and night-time recipes.

Pineapple Coolers

You will need:

4 cups pineapple chunks, chilled

1 1/2 cups ice

1/4 cup lime juice

1/4 cup coconut milk{{more}}

1/3 cup rum (if desired )

Method

Blend all ingredients together until smooth. Garnish with a pineapple round, lime wedge or a sprig of mint. For a sweeter drink, add in simple syrup or grenadine syrup.

Watermelon Sorbet

You will need:

1 cup sugar

1 cup water

8 cups seedless watermelon

2 tbsp lemon juice

Method

In a small pan, add sugar and water and bring to a boil. Cook until sugar is dissolved then set aside to cool. Puree watermelon in batches and place in a large bowl. Add sugar syrup and lemon juice and mix well. Place in a 13×9” dish, cover and place in freezer until firm. Puree frozen mixture before serving.

Malibu Sunset

You will need:

Ice cubes

3-4 oz pineapple-orange juice

2 oz Malibu coconut rum

Grenadine, drizzled

Maraschino cherries, for garnish

Pineapple and/or orange slices, for garnishing

Method

Add ice to glass. Add juice, Malibu and stir. Drizzle in grenadine. Garnish with cherries, pineapple/orange slices.
